Hundreds of years ago\u00a0Abgoosht\u00a0was made with lamb and chickpeas. However, later on when new foods such as potatoes and tomatoes were introduced to Iranian Cuisine, the recipe\u00a0had some changes.<\/strong><\/p>\n<p><strong>Serving\u00a0this delicious food has a special custom; first the broth is poured in a bowl and served with small pieces of bread\u00a0soaked in it. Then the remaining ingredients like potatoes, beans, chickpeas and lamb are mashed up to a mashed-potato type consistency and served separately alongside with the broth.<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><strong>Lamb shanks<\/strong><\/li>\n<li><strong>White beans, soaked over night<\/strong><\/li>\n<li><strong>Chickpeas, soaked over night<\/strong><\/li>\n<li><strong>Large onion<\/strong><\/li>\n<li><strong>Tomatoes<\/strong><\/li>\n<li><strong>Tomato paste<\/strong><\/li>\n<li><strong>Salt<\/strong><\/li>\n<li><strong>Ground dried lime, or<\/strong><strong>\u00a0lemon juice<\/strong><\/li>\n<li><strong>Pepper<\/strong><\/li>\n<li><strong>Large potato, peeled<\/strong><\/li>\n<li><strong>Turmeric<\/strong><\/li>\n<li><strong>Water<\/strong><\/li>\n<\/ul>\n<ol>\n<li><strong>Put the meat, onion, chickpeas, beans and peeled tomatoes in a large pot.<\/strong><\/li>\n<li><strong>Put the pot over medium heat. Add turmeric and 5 cups of water and bring to a boil. Cover and cook on low heat for one to two hours.<\/strong><\/li>\n<li><strong>When meat is almost cooked, remove the tomatoes, onion and any fat from the meat and place them in a bowl.<\/strong><\/li>\n<li><strong>Using a blender or meat masher, mash the onion, tomatoes and fat then add it to the pot again. Add salt, pepper, tomato paste, potato and lemon juice. Cover and continue cooking for another hour.<\/strong><\/li>\n<li><strong>If necessary adjust water and keep cooking until all the ingredients are fully cooked.
