The main ingredients of this dish are eggplants and\u00a0Kashk\u00a0which is a type of yogurt whey. In the process of making cheese, the remaining liquid after milk has been strained is called whey.<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><strong>eggplants<\/strong><\/li>\n<li><strong style=\"text-transform: initial;\">onion<\/strong><\/li>\n<li><strong style=\"text-transform: initial;\">chopped mint, fresh or dried<\/strong><\/li>\n<li><strong style=\"text-transform: initial;\">turmeric<\/strong><\/li>\n<li><strong style=\"text-transform: initial;\">salt<\/strong><\/li>\n<li><strong style=\"text-transform: initial;\">cloves garlic<\/strong><\/li>\n<li><strong style=\"text-transform: initial;\">walnuts<\/strong><\/li>\n<li><strong style=\"text-transform: initial;\">Kashk (liquid whey protein) to taste<\/strong><\/li>\n<li><strong>vegetable oil<\/strong><\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li><strong>Cut the top off the eggplant and peel them then slice them in half lengthwise. Heat vegetable oil in a frying pan and fry the eggplants until soft and golden and set aside.<\/strong><\/li>\n<li><strong>Slice the onions and place them in a frying pan with heated oil. Chop the garlic and add to the pan. Fry them until golden.<\/strong><\/li>\n<li><strong>Add salt, mint and turmeric to the onions and stir.<\/strong><\/li>\n<li><strong>Add fried eggplants to the pan. Add 1\/2 cup water and allow them to cook for 10-15 minutes on medium heat.<\/strong><\/li>\n<li><strong>Crush the walnuts.
