{"id":4609,"date":"2018-12-14T13:58:05","date_gmt":"2018-12-14T10:28:05","guid":{"rendered":"https:\/\/specialexplorer.com\/?p=4609"},"modified":"2018-12-14T13:58:05","modified_gmt":"2018-12-14T10:28:05","slug":"ghormeh-sabzi","status":"publish","type":"post","link":"https:\/\/specialexplorer.com\/?p=4609","title":{"rendered":"Ghormeh sabzi"},"content":{"rendered":"<p>Ghormesabzi:<\/p>\n<p>The most popular Khoresh or Persian stew which has so many followers not only among Iranians but also among foreigners.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-4610\" src=\"https:\/\/specialexplorer.com\/wp-content\/uploads\/2018\/12\/ghormeh-sabzi-5-FP-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/specialexplorer.com\/wp-content\/uploads\/2018\/12\/ghormeh-sabzi-5-FP-300x300.jpg 300w, https:\/\/specialexplorer.com\/wp-content\/uploads\/2018\/12\/ghormeh-sabzi-5-FP-150x150.jpg 150w, https:\/\/specialexplorer.com\/wp-content\/uploads\/2018\/12\/ghormeh-sabzi-5-FP-100x100.jpg 100w, https:\/\/specialexplorer.com\/wp-content\/uploads\/2018\/12\/ghormeh-sabzi-5-FP.jpg 540w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong><em>Ingredients:<\/em><\/strong><\/p>\n<ul>\n<li>dry kidney beans\u00a0See the notes if you want to use canned beans<\/li>\n<li>bunches parsley<\/li>\n<li>bunches cilantro<\/li>\n<li>bunches chives<\/li>\n<li>bunch fenugreek or dry fenugreek leaves<\/li>\n<li>cup\u00a0vegetable oil +vegetable oil<\/li>\n<li>yellow onion\u00a0diced<\/li>\n<li>lb\u00a0beef or lamb\u00a0cubed<\/li>\n<li>turmeric<\/li>\n<li>cups\u00a0water<\/li>\n<li>Persian dried limes\u00a0Limoo amani, soaked in water for an hour<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><strong><em>Instructions:<\/em><\/strong><\/p>\n<ol>\n<li>Soak kidney beans in a bowl of water for 2-3 hours.<\/li>\n<li>Wash parsley, cilantro, chives and fenugreek. Pat dry and chop very finely.<\/li>\n<li>Heat a dry pan on low heat and saute the herbs for about 10 minutes until they dry out a bit. Add 1\/3 cup vegetable oil and saute for 15 more minutes on low heat. Set aside.<\/li>\n<li>Heat 3 tbsp vegetable oil in a large pot over medium heat. Saute onion until translucent.<\/li>\n<li>Add cubed beef or lamb and turmeric, Saute until the color is light brown.<\/li>\n<li>Add 4-5 cups of water and bring to boil, then turn the heat to medium-low so it simmers lightly.<\/li>\n<li>Rinse kidney beans and add it to the stew.<\/li>\n<li>Cover and cook for 30 minutes.<\/li>\n<li>Add sauteed herbs and cover.
