Joojeh Kebab (Grilled Saffron Chicken)

Joojeh Kebab is considered as a very popular dish in Iran. This kebab is usually served at parties such as wedding ceremonies or wherever Iranians gather to take time as It is a food that is almost never eaten alone but with family or in a picnic. There are two ways of serving it; with Persian rice or with Persian bread. The Grilled tomatoes are always beside this dish, but other optional components could be grilled peppers and fresh lemons.

Ingredients:

  • boneless chicken breast
  • large onion
  • saffron
  • black pepper
  • salt
  • lemon juice
  • tomatoes

Instructions:

  1. At first cut up the chicken breast into cube pieces.
  2. Marinade the chicken with chopped onions, olive oil, salt, pepper, and saffron which is finely ground. Make sure to mix the chicken pieces very well into the marinade so that all the pieces are coated. Place it in the fridge for a few hours. Remember If you want to make the chicken spicy add red pepper to the marinade.
  3. Thread chicken pieces on long, thin metal skewers and brush them with the marinade. Also thread whole tomatoes separately on another skewer.
  4. Grill them over a hot charcoal grill for about 8-15 minutes and turn them regularly to make sure both sides are equally cooked. Do not overcook the chicken as this will toughen it. Also, you want to avoid having too much of flame because your kebab will be hard on the outside and not cooked inside.
  5. Serve hot with rice or bread and enjoy life as it is.
